This simple creamy roasted tomato soup and caramelised onion grilled cheese toaastie offers the ultimate comfort after a long day. You'll spend fifteen minutes in the kitchen and the rest of the time with your feet up!  I recommend putting potato chips onto your grilled cheese sandwich once it has been toasted for additional salty crunch.



  • 1 kg fresh tomatoes ((halved))
  • 1 large carrot ((chopped and microwave steamed for 5 minutes))
  • 1 large onion ((quartered))
  • 4 tbsp olive oil
  • 1 tsp garlic ((minced))
  • 1 tsp dried oregano
  • 1 tbsp tomato paste
  • 3 cups stock
  • 1/4 cup cream

Caramelised onion grilled cheese toastie

  • 1-2 onion ((thinly sliced - approx 2 cups))
  • 1 tbsp butter
  • 1/2 tsp caraway seeds ((optional))
  • 1/2 tsp salt and pepper
  • 1 tsp sugar
  • 1 tbsp balsamic vinegar
  • 8 slices sourdough bread
  • cheese ((cheddar or your choice))
  • potato chips ((to serve, optional))


  1. Preheat oven grill (broiler) to 200C / 390 F

  2. Slice tomatoes in half and remove seeds with your fingers.  Discard the seeds and juice. Place tomatoes on a lined baking tray with steamed carrot and onion.  Douse in olive olive and season with salt and pepper.  Sprinkle over oregano.  Roast in oven for 25 minutes or until tomatoes are charred around the edges and sunken.

  3. Fry sliced onion for grilled cheese toastie with balsamic, sugar and caraway seeds (optional) and salt in 1 tbsp butter until well softened and deeply golden.  Assemble your grilled cheese sandwich by topping sourdough bread with cheese and fried onions.  Butter the outer sides of the bread and toast in a pan or sandwich press until deeply golden.  

  4. In a large pot, bring stock to the boil.  Add roasted tomatoes, carrot, garlic and tomato paste.  Remove soup from heat and use a stick blender to puree tomato and vegetables.  Add cream and season to taste.  Simmer on low heat to further to reduce and intensify the soup to your liking, if required.

  5. Serve creamy tomato soup with a grilled cheese toastie and a side of potato chips.
